Apricot and Pistachio Chicken Patties

These easy-to-make patties from Diabetes Australia are a healthy alternative to beef burgers.

Serves: 4

Ingredients

  • 500g chicken mince
  • 3 slices multigrain bread
  • 90g pistachio nuts
  • 160g dried apricots

Method

In a bowl, combine the mince, grated bread, chopped pistachios and diced apricots, and season with cracked pepper.

Roll into four patties and place on a baking paper-lined baking tray.

Chill for 20 minutes, then place into a non-stick grill pan over medium heat. Cook the patties for 4 to 5 minutes on each side or until golden and cooked through.

Dietitian’s note: These are delicious served in a wholegrain wrap with shaved carrot, beetroot ribbons, apple slices and crisp lettuce.
