Banana Blueberry Bread

Our Banana Blueberry Bread is not only healthy (unlike the ones in the shop), it’s also moist and delicious too – thanks to the blueberries, which are now in season.

Serves: One loaf

Time: One hour

Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup unsalted butter
  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (over-ripe is good too)
  • 1 cup fresh blueberries


Method

Preheat oven to 180°C and grease a 22cmx12cm loaf tin.

In a small bowl, whisk the flour, baking powder, salt and baking soda and then set aside.

Ina larger bowl, beat the butter until creamy, add the sugar and beat until light and fluffy. Add the eggs, beating them in one at a time. Then stir in the dry ingredients and banana, and then fold in the blueberries.

Pour the batter into the prepared tin and bake for 50 minutes, or until cooked through. Let the bread sit for 15 minutes, then remove from the tin to a wire rack to cool.
