Berry Pancakes

Pancakes are great at any time of the day – breakfast, lunch, dessert or afternoon snack. Our delicious Berry Pancakes are great to share with a friend – or not!

Serves: Two

Time: 10 minutes

Ingredients

  • 1/4 cup plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon caster sugar
  • 1 tablespoon sunflower oil
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon shredded coconut
  • 1/4 cup of blueberries
  • Pinch of salt

 

Berry Sauce Ingredients:

  • 1/4 cup frozen berries
  • 1 teaspoon icing sugar

 

Method

Sift flour, baking powder and sugar into a jug and mix. In a separate bowl whisk together the egg, milk and oil until combined. Add the wet ingredients into the dry and stir until well combined. Add berries and coconut and stir gently. Lightly grease a non-stick fry pan and heat to a medium temperature. Pour batter into the fry pan and cook until bubbles form on surface, flip and cook the other side until lightly browned. This recipe makes about five pancakes.

 

Place the frozen berries in a covered microwavable container and microwave for 30 seconds. Add in icing sugar and whisk, combining the sugar and breaking down the berries into a sauce. Serve pancakes with berry sauce and ice-cream.
