Coconut Rice Pudding

If you are after a comforting sweet treat, then why not try our Coconut Rice Pudding? While simple, it is delicious, and is made special by adding coconut milk and toasted coconut.

Serves: Four

Time: 35 minutes


  • 100g white rice
  • 1 x 400g can coconut milk
  • 300ml soy or dairy milk
  • 25g caster sugar
  • few drops vanilla essence
  • 1 tablespoon toasted coconut



In a small pan over a low heat, add the rice, coconut milk, soy/dairy milk, sugar and vanilla essence. Leave to simmer gently for 25 minutes, or until the rice is tender. Serve topped with toasted coconut.
