CWA One-Pot Lamb Shank Casserole

This hearty Lamb Shank Casserole is a CWA classic and a no-fuss one-pot dish that can be prepared ahead of time with a few simple ingredients from your cupboard. And it tastes even better the next day!

Serves: 2

Ingredients

    • 2 lamb shanks
    • flour, seasoned with salt and pepper
    • 1/2 cup tomato sauce
    • water
    • mint jelly
    • 1 tablespoon lemon juice
    • 1/2 tablespoon cornflour

Method

Preheat oven to 180°C.

Coat lamb shanks in seasoned flour, then brown on both sides. Place in a casserole dish.

Heat the tomato sauce, water, mint jelly and lemon juice together, until the jelly melts. Thicken with cornflour and pour over the shanks.

Cook for two hours.
