Classic Anzac biscuits

The Anzac spirit is alive and well with these yummy Anzac biscuits.

Ingredients

  • 1 cup rolled oats
  • 3/4 cup desiccated coconut
  • 1 cup plain flour
  • 1 & 1/2 teaspoons bicarbonate of soda
  • 2 tablespoons boiling water
  • 1 cup sugar
  • pinch of salt
  • 125g butter
  • 1 tablespoon golden syrup

Method

Pre-heat oven to 150°C.

Mix rolled oats, sifted flour, sugar, salt and coconut in a bowl.

Combine butter and golden syrup over a gentle heat, stirring until melted.

Mix soda with boiling water, add to the melted butter mixture, then stir into dry ingredients.

Spoon teaspoonfuls of mixture on to greased oven trays; allow room for biscuits to spread out as they cook.

Bake in 150°C for 20 minutes. Cool on trays.

Makes approximately 36 biscuits.
