Easy Fruit Tart

With a pre-prepared tart shell, tinned fruit and instant vanilla pudding mix, our Easy Fruit Tart is no effort at all to make. So invite the guests over and impress.

Time: Two and a half hours

Ingredients

  • 1 pre-prepared tart crust
  • 1 small packet instant vanilla pudding mix
  • 2 cups milk
  • 3 cups sliced fruit
  • 2 tablespoons lemon juice
  • 1 tablespoon caster sugar
  • 3 tablespoons apricot jam


Method

Using your fingers to work the tart crust into a tart pan and cover with plastic wrap. Put in the fridge for 30 minutes.

Preheat the oven to 180°C and bake the crust for 25 minutes until golden. Remove and leave on a wire rack to cool.

Following the directions on the pudding mix, prepare the vanilla pudding and let it set in the fridge for 30 minutes. Spread the pudding in a thin layer over the crust. Arrange the sliced fruit over the pudding and sprinkle with lemon juice. Heat the jam in the microwave and then brush the fruit with the heated jam.

Place in the fridge for one hour before serving.
