Fluffy Apple Muffins

Our Fluffy Apple Muffins will hit the spot come morning tea when you want something a little sweet to put a smile on your face and see you through to lunchtime.

Serves: Four

Time: 40 minutes

Ingredients

  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • pinch salt
  • 3 tablespoons unsalted butter, softened
  • 1/3 cup sugar
  • 1 large egg white
  • 3 tablespoons buttermilk
  • 1/3 cup peeled and diced apple
  • 1 teaspoon light brown sugar

Method

Preheat oven to 200°C and grease a four holes in a muffin tin. In a small bowl, whisk together the flour, baking powder, cinnamon and salt.

In another bowl, mix with an electric mixer the butter and sugar. Beat this mixture thoroughly, until fluffy and well-blended. Add the egg white and beat to blend.

Add half of the flour mixture and two tablespoons of the buttermilk and beat lightly. Add the remaining mixture and beat until just combined.

With a spatula, fold in the diced apples. Divide the batter between the four muffin holes and sprinkle a quarter teaspoon of brown sugar over each muffin before placing in the oven.

Bake for 20 minutes.
