French Onion Soup

There are few things more comforting than a bowl of soup, and our French Onion Soup is perfect for times when you need to make a delicious meal for one.

Time: 35 minutes

Ingredients

  • 3 white onions, thinly sliced
  • 4 tablespoons butter
  • 2 cloves garlic, finely chopped
  • 1 tablespoon thyme leaves
  • 500ml beef stock
  • 200ml red wine
  • 3 tablespoons balsamic vinegar
  • salt and pepper, to taste
  • 1 baguette, sliced
  • 1 tablespoon Dijon mustard
  • 50g gruyere cheese, sliced


Method

In a large frying pan, add three tablespoons of the butter and the garlic and thyme. Heat until the butter begins to sizzle. Then add the sliced onions and cook until they begin to soften and caramelise.

To a separate pot over medium heat, pour in the stock, wine and balsamic, and bring to a simmer. Once the onions are done, add them to the stock mixture. Leave to simmer over medium to low heat for 15 minutes.

While the soup is cooking, preheat an oven to 180°C and place a slice of baguette on a lined baking tray. Spread it with the remaining butter and the mustard. Top with the Gruyere cheese and bake until the cheese melts and the bread becomes crisp.

Remove the soup from the heat and season. Serve the Gruyere baguette on top of the soup, so it can soak up the goodness.
