French Toast BLT

For those who prefer savoury to sweet, our French Toast BLT is the perfect alternative for breakfast or dinner. It’s quick and easy, and deliciously tempting.

Serves: Two

Time: 30 minutes

Ingredients

  • 4 slices bacon
  • 4 large eggs, lightly beaten
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh chives, plus extra for serving
  • coarse salt, to taste
  • ground pepper, to taste
  • 1 1/2 tablespoon unsalted butter
  • 2 slices crusty bread, cut one-inch thick
  • 2 lettuce leaves  
  • 4 slices tomato

Method

Preheat oven to 190°C. Place bacon on a baking sheet and cook until golden and crisp; about 15 minutes. Rotate sheet halfway through for even cooking. Drain bacon on paper towels.

Meanwhile, in a large, shallow dish, whisk together eggs, cream, and chives, then season with salt and pepper. Lay bread in a single layer in the egg mixture and soak for three minutes on each side. In a large pan, melt butter over medium. When butter starts to sizzle, add bread and cook until golden and crisp around edge; about three minutes per side. To serve, layer lettuce, tomato and bacon on each slice of French toast, then sprinkle with chives.
