Fresh Pea and Mint Salad

English peas and mint are a classic combination and when prepared in a salad, a perfect side dish. Our recipe for Fresh Pea and Mint Salad has plenty of fresh, summer flavours for a warm day.

Serves: Two

Time: 20 minutes 

Ingredients

  • 2 cups water
  • 1 cup shelled green peas
  • 6 cups trimmed rocket
  • 1/4 cup chopped fresh mint
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup shaved fresh pecorino cheese

 

Method

Bring the two cups of water to a boil in a medium saucepan. Add the peas and cook for one minute. Drain and plunge peas the into ice water and then drain. Combine the peas, rocket, and mint in a large bowl. Add the lemon juice, olive oil, salt and pepper; toss well. Sprinkle with cheese. Serve immediately.
