Lemon Herb Chicken

Time: 30 minutes

Ingredients

  • 1 tablespoons butter
  • 2 boneless skinless chicken breasts
  • salt and pepper, to taste
  • 1/2 cup rice, uncooked
  • 1 cup chicken stock
  • 1 lemon, juice
  • handful parsley, chopped


Method

Melt the butter over medium heat in a large pan. Then season the chicken with salt and pepper, and brown in the pan for 1–2 minutes on each side. Place the chicken on a plate and set aside.

Add the rice, chicken stock and lemon juice to the pan, and then place chicken on top and cover with a lid. Simmer over low to medium for 20–25 minutes, until the rice absorbs the liquid and is cooked through. Sprinkle with parsley before serving.
