Mango Fruit Fool

One of the simplest of desserts, Fruit fool is a classic English dessert. Enjoy a taste of the tropics with this sublime recipe for Mango Fruit Fool.

Serves: Two

Time: 35 minutes 


  • 75g low-fat ricotta cheese
  • 1/4 cup low-fat vanilla custard
  • 1 large ripe mango, peeled and roughly chopped
  • 4 pieces almond bread


Place ricotta in a food processor and process until creamy. Pour in custard and pulse until just combined, then transfer to a large bowl. Clean the food processor bowl before processing the mango until smooth. Put aside 1/3 cup mango puree. Fold remaining mango puree into ricotta mixture. Half-fill two, one-cup capacity glasses with mango-ricotta mixture and then spoon over extra puree. Cover and place in fridge for 15 minute and then serve with almond bread.
