Microwave Chicken Risotto

The beauty of microwave cooking is that with little preparation you can have a healthy, filling meal in minutes. This delicious Microwave Chicken Risotto needs just a few basic pantry ingredients and some leftover roast chicken.

Time: 30 minutes

Ingredients

  • 20g butter
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 small onion, finely diced
  • 1/2 cup Arborio rice
  • 1 1/2 cups (750ml) chicken or vegetable stock
  • 1/2 cup frozen peas
  • 1/4 cup finely grated parmesan cheese
  • 1 cup cooked chicken, shredded
  • 1/4 cup steamed broccoli florets

 

Method
In a microwave-safe bowl, place butter and oil and microwave on night for two minutes.

Add garlic and onion, cooking for a further two minutes.

Then add rice, stirring well to coat. Cook for another four minutes.

Add stock and return to microwave for 11 minutes.

Stir through frozen peas, broccoli and cooked chicken. Cook for a further seven minutes.

Remove bowl from microwave and stir through a generous amount of parmesan cheese. Add salt and pepper to taste. Enjoy!
