Hankering for a sweet and tangy treat? This microwave-friendly Lemon Pudding can be whipped up in no time at all – a perfect dessert for one! Simply double the ingredients to make an extra helping for a friend (or yourself).
- 25g softened butter
- 25g caster sugar
- 25g self-raising flour
- 1 egg
- zest of 1/4 lemon
- 1/2 teaspoon vanilla essence
- 2 tablespoons lemon curd
- creme fraiche or ice cream, to serve
In a small microwaveable serving bowl, mix butter, sugar, flour, egg, lemon zest and vanilla together until smooth and creamy. Microwave on high heat for three minutes, stirring halfway through cooking. Mixture should rise and then set all the way through.
Next, heat the lemon curd in the microwave for 20 seconds and stir until smooth. Pour over the pudding. Enjoy immediately with a dollop of creme fraiche or scoop of ice cream.
