Nourishing Baked Oatmeal

You can prepare this healthy breakfast dish the night before, then refrigerate overnight and put into the oven when you get up for a warming, homemade morning treat. This recipe is highly adaptable. You can add a few frozen berries, sliced banana or nuts to the mix for something different. Serve with a dollop of plain Greek yoghurt.

Serves: Eight

Time: Five minutes

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 cup apple sauce
  • 1/3 cup brown sugar
  • 2 eggs, 4 egg whites, or equivalent egg substitute
  • 3 cups rolled oats, uncooked
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup milk


Method

In a large mixing bowl, combine oil, apple sauce, sugar and eggs until smooth. Add the dry ingredients and milk. Mix well. Grease a 33 x 23cm baking pan. Spoon the mixture into pan. Bake uncovered at 180°C for about 30 minutes. Refrigerate.
