Easy Cheesy Herb Muffins in a Mug

These Cheesy Herb Muffins in a Mug make the perfect afternoon snack when hunger pangs hit. Simply pop them in a microwave for a few minutes and you’ll have instant delicious savoury muffins that can be served on their own or with soup!

Time: 10 minutes

Ingredients

  • 125g self-raising flour
  • 1/2 teaspoon bicarbonate of soda
  • 2 teaspoons dried basil
  • 1 teaspoon dried chives
  • a pinch thyme leaves
  • 50g grated parmesan cheese
  • 1 free-range egg
  • 40ml canola or sunflower oil
  • 50ml milk
  • 50ml plain yoghurt

Method
In a medium-sized microwaveable bowl, mix together flour, bi-carb soda, herbs and parmesan.

Beat the egg in a small separate bowl and add the oil, milk and yoghurt, mixing well.

Pour the egg mixture into the dry ingredients and mix to combine.

Spoon the mixture into three (large) or four (small) mugs, filling until one-third full.

Cook three muffins together in microwave for about four minutes on high heat. Muffins should be raised and firm to the touch. You may need to adjust the timing depending on your microwave and size of mugs.

When cooked, allow to sit for one minute, then score around the edge of the mug and tip the muffin onto a cooling rack.

Enjoy warm with butter!
