Easy Tuna and Bean Pita Pockets

These protein-packed pita pockets with chunks of tuna, white beans, sundried tomatoes, cucumber and rocket (arugula) are perfect for picnics or a quick lunch at home. Lovers of Mediterranean food will enjoy this super easy and delicious dish! Feel free to use any kind of white bean in this salad, such as cannellini or navy beans. Canned beans always work a treat and are super convenient.

Serves: 2

Ingredients

  • 180g can of tuna, drained
  • 1/2 cup canned cannellini beans, drained
  • 1 cucumber, diced
  • 1/2 cup sundried tomatoes, sliced
  • 1 cup rocket leaves (arugula)
  • 2/3 cup flat-leaf parsley
  • 1/2 lemon, juiced
  • 2 teaspoons olive oil
  • 2 pita pockets

 

Method
In a large bowl, combine tuna, beans, cucumber, sundried tomatoes, rocket, parsley and lemon juice with olive oil.

Season with salt and pepper, if desired.

Slice off the top of the pita pocket and stuff with salad mixture.

Tip: Leftover mixture can be kept refrigerated for two to three days.
