For an easy, no-fuss dinner on these warm summer evenings, why not try this filling frittata?
For a filling, no-fuss meal this evening, why not give our Ham, Cheese and Pea Frittata a go? Serve with chutney or your favourite sauce to really give it some zing.
1 tablespoon olive oil
1 red onion, thinly sliced
150g leg ham, cut into 1cm cubes
1/2 cup (120g) frozen baby peas (not thawed)
1 cups cooked macaroni or other short pasta
1/2 cup (120g) grated cheddar cheese
Chutney, to serve
Heat oil in pan and cook onion for two minutes. Add remaining ingredients (except eggs). Whisk eggs and season with salt and pepper. Pour eggs into the pan, reduce heat and cook until almost firm. Place the pan under the grill until golden. Cool slightly, then serve with chutney and salad.
