Simple Savoury Veggie Pancakes

Try these Indian-inspired Simple Savoury Pancakes for an inexpensive vegetarian meal.

Vegetarian dosa serves with dips

Dosas originate from Southern India, but that doesn't mean they’re difficult to make. These Simple Savoury Pancakes are delicious and offer something different for dinner.

Serves: 4 – 6
Time: 30 minutes, plus resting


  • 1 cup chickpea flour
  • 1/4 cup plain wholemeal flour
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground turmeric
  • 2 cups water
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil
  • 1/2 cup plain yoghurt
  • 1 tablespoon mint, chopped
  • 2 teaspoons lemon juice, plus wedges


  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 sweet potato, grated
  • 1 zucchini, grated
  • 1 clove garlic, crushed
  • 1/4 cup balti curry paste (can be found at local grocer)
  • 200g paneer, crumbled (Indian cheese, found at local grocer)

In a small bowl, mix together yoghurt, mint and lemon. Set aside. In a large mixing bowl, mix together the flours and spices. Whisk in water, gradually. Mix in egg and oil, making a smooth batter. Rest batter for 15 minutes. Using a large, non-stick frying pan, heat oil overa  medium heat. Pour 1/2 cup of batter into the prepared pan, cooking 1 – 2 minutes on each side. You will have about 6 batches worth of batter. Slide dosa onto a plate. To cook the filling, heat oil on high using a large frying pan. Sauté onion, sweet potato, zucchini and garlic for 4 – 5 minutes. Stir in the curry paste, cook for 1 minute. Add in crumbled paneer, stir through. Place filling onto pancake and roll up. Repeat with the rest of the dosas. Serve with yoghurt dipping sauce and lemon wedges.
