Wild Rice Salad

This incredibly easy dish has healthy written all over it. It’s loaded with wild rice, nuts, dried fruit and fresh herbs. Whip this dish up in less than 30 minutes and serve as a side to your choice of meat, or enjoy it on its own!

Serves: 2


  • 100g mixed rice, such as wild rice
  • 20g mixed nuts of your choice
  • a handful each of fresh basil, mint or other herbs
  • 20g dried apricots
  • extra virgin olive oil



Cook the rice according to the packet instructions until tender. Drain, then allow to cool.

Roughly chop the nuts, pick and roughly chop the basil and mint leaves, then roughly chop the apricots.

Combine with the rice, season with sea salt and black pepper, then drizzle with oil. Serve with grilled meat or fish.

    I love wild rice! I got introduced to it when I lived in the US. It does take a while to cook, and I wouldn't use it for every rice recipe (it isn't actually a rice). I make a batch of it from time to time; use part of it with a meal. Then package the rest in small containers or plastic bags, and freeze. I often use it mixed half-and-half with white rice.

    P.s. my tip for cooking wild rice. Put some (I use about 1/2 cup) in a large saucepan with water. Bring to the boil and cook for 5 minutes. Turn the heat off; cover the saucepan, and leave for about 1/2 hour. Take the lid off, bring to the boil again, and cook until almost all the kernels have opened and not tough when you bite them.
