Salted Caramel Popcorn Slice

Serves: 12 slices

Time: Two and a half hours

Ingredients

  • 8 cups popped popcorn
  • 2 cups old-fashioned oats
  • 1 cup almonds
  • 1 cup raisins
  • 3/4 cup honey
  • 3/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup white chocolate chips


Method

Pop the popcorn in the microwave (about half a cup of corn kernels makes eight cups of popcorn).

Meanwhile, in a saucepan, mix the honey, salt and sugar, and bring to a boil. Stir until the sugar dissolves and then remove from heat.

In a large bowl, mix the popcorn, oats, fruit and nuts. Pour over the honey syrup and mix well.

Grease a 9×13-inch pan and scoop in the mixture. Evenly press the mixture into the pan. Then press the chocolate chipsover the top. Refrigerate for two hours before slicing.
