Spicy Beef Curry with Cauliflower Rice

Need a low-carb but filling, high-protein meal? You can’t go past our Spicy Beef Curry with Cauliflower Rice. It’ll warm and comfort you without any empty calories in sight. 

Serves: Four

Time:  two and a half hours

Ingredients

  • 500g beef steak
  • 3 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 brown onion, chopped
  • 1 tablespoon minced fresh ginger root
  • 400ml beef stock
  • 4 teaspoons ground cumin
  • 2 teaspoons spice turmeric ground
  • 1 teaspoon mustard seeds
  • 1 fresh chilli
  • 100g cauliflower

 

Method

In a saucepan heat the oil, then add onion, garlic and ginger. Sautè for two minutes then add beef and brown lightly. Next, add the cumin, turmeric, mustard seeds and chilli. Bring to a boil, then turn down the heat to a low simmer and cover. Cook on a low simmer for two hours or until the meat is tender, stirring every half hour or so.
Grate the cauliflower florets until they are around the size of rice grains. Heat the oil in a fry pan, add the cauliflower ‘rice’ and sauté for five minutes until lightly caramelised. Place curry and cauliflower rice in serving bowls and enjoy!
