Cheap and cheerful, our Spicy Eggplant Spaghetti is full of satisfying flavours with bacon, chilli, basil and garlic. Enjoy as is or serve with a garden salad. And don’t forget the glass of red!
Time: 25 minutes
- 100g spaghetti
- 2 tablespoons extra virgin olive oil
- 1/2 small red chilli, seeded and finely sliced
- 1 small brown onion, finely chopped
- 1 garlic clove, crushed
- 1 bacon slice, rind removed and chopped
- 100g eggplant, diced
Cook the pasta in a large saucepan of boiling water and then drain. Heat one tablespoon of the oil in a frying pan and cook the chilli, onion, garlic and bacon over medium heat for five minutes. Remove from pan and set aside. Add the remaining tablespoon of oil to the pan and sautè the eggplant until cooked. Add the bacon mixture back to the pan and cook until heated. Toss the spaghetti through and season to taste. Enjoy with a garden salad and a glass of red.
