Tasty Apple Turnovers

Today’s Tasty Apple Turnovers are an ideal way to use ‘not-so-crispy’ apples before they go to waste. Wrapped in puff pastry and sweetened with brown sugar, they’re perfect for morning or afternoon tea.

Serves: Four
Time: 40 minutes

Ingredients

  • 4 sheets puff pastry, partially thawed
  • 4 large apples, peeled and diced
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons water
  • 1 tablespoon milk

Method

Preheat oven to 200°C and line two trays with baking paper. Add apples to a saucepan and stew with sugar, cinnamon and water for 10 to 15 minutes, or until apples have softened.

Using a plate as a guide, cut two 14cm diameter circles from each pastry sheet. Spoon the apple mixture onto one half of each pastry circle, leaving a clean border. Fold the empty half over the filling to enclose, and seal the edge with a fork. Brush the tops with milk and sprinkle with a little sugar. Bake for 20 minutes, swapping the trays halfway through if your oven heats unevenly. When the pastry is puffed and golden, your turnovers are ready.

Tip: by cutting smaller circles you can make four snack-sized turnovers.
