Toasted Cheese Bake

Finding time to cook a decent meal when working has never been easy but this Toasted Cheese Bake can be popped in the oven while you relax after a hard day.

Ingredients
1 tablespoon olive oil
6 large ½ inch thick slices of country bread
2 cloves garlic
225g fresh tomatoes, sliced
1/3 cup Gruyere cheese, grated
1/2 cup goat cheese, crumbled
1 tablespoon fresh chopped rosemary
2 teaspoons fresh thyme
1 teaspoon salt
½ teaspoon black pepper
4 large eggs
2 cups milk

Method
Preheat the oven to 180’C. Oil a baking or gratin dish. Rub the bread slices with one clove of garlic, halved. Mince the second clove of garlic and mix with the tomatoes, season with a pinch of salt and pepper, and set aside. Place half the bread slices in the baking dish and top with half the reserved tomatoes, cheese and herbs. Place another layer on top.

Beat together the eggs and milk. Pour over the bread-tomato mixture. Place the dish on a baking sheet and bake for 40 to 50 minutes until puffed and browned.

Eat on a tray in front of the TV and keep the leftovers for a cold lunch the next day!
