Tomato Soup

There is nothing better than homemade soup, and our recipe for Tomato Soup is quick and easy to make. A good tip is to double the ingredients to have extras during the week.

Serves: Two

Time: 15 minutes


  • 1 1/2 cups tomato juice
  • 1 tablespoon tomato paste
  • 4 spring onions, minced
  • zest of 1/2 lemon
  • 1 tablespoon fresh lemon juice
  • 1/2 cup sour cream
  • 1 teaspoon caster sugar
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon curry powder
  • freshly chopped chives
  • salt and freshly ground pepper, to taste



Whisk together all ingredients in large saucepan over medium heat. Heat for 10 minutes; do not boil. Ladle into individual bowls and garnish with fresh chopped chives.
