Warming Cinnamon Apples

Enjoy our Warming Cinnamon Apples on their own for a tasty and healthy dessert – or serve with a scoop of ice-cream for some happy, childlike glee.

Serves: Four

Time: 30 minutes

Ingredients

  • 1 tablespoon brown sugar
  • 2 teaspoon cornflour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup 100 per cent apple juice
  • 2 teaspoons coconut oil, melted
  • 2 medium apples, peeled if desired, then cored and thinly sliced
  • 2 tablespoons raisins
  • 1/4 cup chopped walnuts

 

Method

In a small bowl, mix together the brown sugar, cornflour, cinnamon and nutmeg. Next, stir in one-third cup of the apple juice,then set aside.

Put a saucepan over high heat, then pour in oil and add the apples. Cook for two to three minutes, or until the apples are tender and lightly browned. Stir constantly. Then, stir in the raisins and the remaining two-third cup of apple juice. Add the brown sugar mixture and cook until the sauce has thickened, stirring constantly. Just before serving, sprinkle with the walnuts, and a scoop of ice-cream, if you desire.
