Enjoy these simple and affordable Spicy Cheese Scones with your eggs at breakfast or make a meal of it with some beans and roast veggies.
Time: 35 minutes
- 1/2 cup butter
- 2 1/2 cups whole-wheat flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 100g sharp cheddar, diced
- 1 jalapeño, finely diced (if you want less spicy, remove skin)
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1 egg
- salt and pepper
Place butter into the freezer for 30 minutes. Heat oven to 220°C. Line a baking tray with baking paper, or lightly grease baking tray if you don’t have paper. In a large mixing bowl, mix together flour, baking powder and salt. Remove butter from freezer, and using a grater, grate into the flour mixture. Using your hands, mash the mixture together (don’t worry about it not being smooth). Add the jalapeño, grated cheese, eggs and milk to the bowl, and use your hands to mix everything together. Mix so that it is just incorporated, but don’t overwork the dough. Sprinkle a clean work surface with a little flour and shape the dough into a 1 1/2-inch thick disc.
Use a glass to cut out the scones and transfer to the prepared baking tray. In a small bowl, whisk together the egg. Brush the egg over the scones and sprinkle with salt and pepper.
Bake for approximately 25 minutes, until scones are golden brown.
