Cinnamon Apple Cake

A real reminder of all things great about “the old days”, great to share with family and friends.

Ingredients

  • 2 large apples (chopped and peeled)
  • 1 teaspoon vanilla essence
  • 2 tablespoons butter
  • 2.5 tablespoons sugar
  • 1 egg
  • 1 cup flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder

Method
Stew the apples with the vanilla essence and keep warm.
In a bowl, cream the butter and sugar then add the egg and beat well.
Add cinnamon, baking powder and sifted flour.
Place onto a floured board and divide in two.
Roll out half the mixture and fit into a 6-inch tin and spread with apple.
Roll out the other half and cover the apple.
Bake in a moderate over for 20 to 25 minutes

If you desire, top with a dollop of thickened cream
