Easy Grilled Cheesy

Our Easy Grilled Cheesy sandwiches are super delicious and simple to make. Experiment with different cheese or add sautéed capsicum, mushrooms, onions or whatever takes your fancy.

Serves: Two
Time: 15 minutes


  • 1 tablespoon extra-virgin olive oil
  • 4 breakfast sausages, casings removed
  • 4 eggs
  • 2 tablespoons cream
  • 2 tablespoons chopped chives
  • salt
  • freshly ground black pepper
  • 2 tablespoon butter, divided
  • 1 avocado, mashed
  • 2/3 cup shredded cheddar cheese
  • 4 slices sourdough


Heat olive oil in a heavy frying pan over medium-high heat. Cook sausage until browned, breaking it up into pieces as it cooks. Drain off the fat and wipe the pan clean.

Whisk together eggs and cream. Cook egg mixture in the frying pan, gently stirring with a spatula until just set. Season eggs with salt and pepper. Remove the eggs from the pan and wipe the pan clean again.

Assemble the sandwiches by dividing the avocado mash, sausage, eggs and cheese between two slices of bread. Top each half with the second slice of bread.

Heat butter in frying pan over medium-low heat. Once hot, add sandwiches. Cover frying pan with a lid and cook until golden brown (about two minutes). Cook on the other side, until cheese has melted. Serve immediately.
