15-minute Spicy Indian Salad

This Indian-inspired salad recipe from the Country Women’s Association’s latest cookbook is full of different textures, flavours and aromas.

Serves: 2–3

Ingredients

  • 1/2 red chilli
  • 3 sprigs coriander, chopped 1/3 cup chopped mint
  • lemon juice
  • 1 small carrot, diced
  • 1/2 red capsicum, diced
  • 1/2 green capsicum, diced
  • 1/4 cucumber, diced
  • 1/2 tomato, diced
  • 1/2 onion, diced

 

Method
Remove the seeds from the chilli, dice and then mix with coriander, mint and lemon juice. Mix with the rest of the vegetables.
