Simple Spaghetti Frittata for One

Take a small can of spaghetti, a few eggs and ingredients you’ll most likely have in your fridge and you can make a tasty frittata for one to enjoy for breakfast, lunch or dinner. Or put those spaghetti leftovers to creative culinary use instead of using the canned stuff.

Serves: One
Time: 30 minutes

Ingredients

  • 3 eggs
  • 1/4 cup milk
  • 1/3 cup parsley, chopped
  • 1/2 cup mushrooms
  • 1/2 cup tasty cheese, grated
  • 220g tin of spaghetti or spaghetti leftovers


Method

Preheat the oven to 180 C.

Whisk the eggs and milk together. Stir in the parsley, mushrooms and half the cheese.

Grease a pie dish, spread the spaghetti over the bottom of the dish. Pour in the egg mixture and sprinkle with the remaining cheese.

Bake for 20–30 minutes. Serve hot or cold.
