Serves: Two

Time: 15 minutes

  • 3 tablespoons white wine vinegar
  • 2 tablespoons finely minced shallot
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 3 tablespoons extra virgin olive oil
  • 5 cups mixed salad greens
  • 500g shredded cooked chicken breast
  • 1 egg, hard-boiled, peeled and chopped
  • 1 strips bacon, cooked and crumbled
  • 1 medium tomato, diced
  • 1/2 large cucumber, seeded and sliced
  • 1/2 avocado, diced
  • 1/4 cup crumbled blue cheese

In a small bowl, whisk the vinegar, shallot, mustard, salt and pepper in a small bowl until well combined. Then mix in the oil. Place salad greens in a large bowl. Drizzle with the remaining dressing. Enjoy with some crusty sourdough bread to complete your meal.
