Chicken and Blue Cheese Salad

This salad makes a complete square meal, satisfying your hunger with chicken and blue cheese and ensuring you consume your five serves of veggies in one hit.

Ingredients

  • 3 tablespoons white wine vinegar
  • 2 tablespoons finely minced shallot
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 3 tablespoons extra virgin olive oil
  • 5 cups mixed salad greens
  • 500g shredded cooked chicken breast
  • 1 egg, hard-boiled, peeled and chopped
  • 1 strips bacon, cooked and crumbled
  • 1 medium tomato, diced
  • 1/2 large cucumber, seeded and sliced
  • 1/2 avocado, diced
  • 1/4 cup crumbled blue cheese

Method

In a small bowl, whisk the vinegar, shallot, mustard, salt and pepper in a small bowl until well combined. Then mix in the oil. Place salad greens in a large bowl. Add half the dressing and toss to coat. Divide salad greens among two plates and arrange equal portions of chicken, egg, bacon, tomatoes, cucumber, avocado and blue cheese on top of the lettuce. Drizzle with the remaining dressing. Enjoy with some crusty sourdough bread to complete your meal.
