YOURLifeChoices subscriber, Irene, has adapted this very quick and easy fruit cake recipe to reduce the amount of sugar require in more traditional recipes.
375g dried mixed fruit
405ml tin apricot nectar
1 generous cup self-raising flour, sifted
Walnuts (optional and amount up to you)
Soak fruit and nuts in nectar overnight. Add flour, add a little more if you think it’s too moist.
Bake in greased loaf tin at 180c for approx 45min to 1 hour depending on your oven. Check at 45 mins.
Cool or serve hot for a pudding. Freezes well. Enjoy!
Adding l cup of mashed pumpkin also makes for a nice change.
