Apricot Meatloaf

Debbie’s cheap and cheerful Apricot Meatloaf gives an old favourite a tangy twist. The leftovers won’t last long!

Ingredients

  • 500g ground beef

  • 60g breadcrumbs

  • 1 egg

  • garlic powder to taste

  • 1 dash Worcestershire sauce

  • 75 ml ketchup

  • 60g brown sugar

  • 80g apricot jam

Method
Preheat oven to 175° C. Combine the ground beef, breadcrumbs, garlic powder, Worcestershire sauce and egg in a large bowl and mix well. Place into a 9X5 inch loaf pan and bake for 35-50 minutes.
While cooking, in a separate bowl, stir together the brown sugar, ketchup and apricot jam. With 20 minutes to go in the baking process, remove the meatloaf from the oven and spread the mixture over the top of the meatloaf and put back in to the oven. Remove from oven when ready and enjoy!
