Today’s Healthy Waldorf Salad is not your average fare. It’s a much healthier version than the traditional mayonnaise-based salad and it’s packed with flavour that will surprise and delight.
You seem to hear a lot about kale these days, and how including it into your diet can be a great way to boost your daily vitamin intake. Kale is best digested if it is massaged – a bit weird, I know. Simply chop it up and add a bit of olive oil, get your hands dirty, and give it a good rub for a minute or two. The rest is pretty straight forward, and will hopefully be something you’ll add to your summer salad repertoire.

Ingredients
- 4 cups kale, packed and finely chopped
- 1 large red apple, chopped
- 3 stalks celery, thinly sliced
- 1/2 cup walnuts, toasted and chopped
- 1/4 cup plus 2 tablespoons raisins
- 2 tablespoons Dijon mustard
- 2 tablespoons water
- 1 tablespoon red wine or apple cider vinegar
- 1/8 teaspoon sea salt
- splash of olive oil
Method
Place kale in a large bowl, massage with olive oil. Add in half of the apple, celery and walnuts and 1/4 cup raisins. Place remaining apple, walnuts and raisins in a blender, with mustard, water, vinegar and salt. Purée until mixture is well combined. Feel free to add a bit water if the mixture is too thick. Pour dressing over kale salad and toss well to combine.
