Refreshing Iced Coffee

With the warmer weather, it’s a great time to try today’s Refreshing Iced Coffee. It’s simple to make and, if prepared the night before, you can enjoy a cooling morning coffee.

Serves: One

Time: 10 minutes, four hours to chill 

Ingredients

  • 55g caster sugar
  • 310ml very strong espresso coffee
  • ice-cream or cream, to serve 


Method

In a saucepan, heat the caster sugar with a tablespoon of hot water until the sugar is dissolved. Simmer for three minutes to make sugar syrup. Add the coffee and stir well. Pour into a small plastic box and freeze. The mixture should be no deeper than 3cm. Leave for four hours. Before serving, stir with a fork to break up any ice crystals and serve in a glass with ice-cream, cream or both!
