Cheese and Chive Biscuits

These Cheese and Chive Biscuits are a great alternative for those who prefer savoury snacks instead of sweet. Ideal for when you’re on the move, and even better to make for your next get-together.

Serves: About 70 cookies
Time: 40 minutes

Ingredients

    • 300g butter at room temperature
    • 3 cups (360g) plain flour
    • 2 cups grated tasty cheese
    • 1 large bunch chives
    • 2 eggs

Method

Preheat oven to 180 degrees Celsius. Line baking trays with baking paper.

In a large bowl, use a wooden spoon to beat butter until creamy. Add remaining ingredients. Mix until just coming together.

Turn onto a lightly floured surface. Knead until dough comes together and forms a ball. Divide into 4 pieces and roll each piece into a 15cm log. Wrap in non-stick baking paper and chill for 30 minutes.

Cut dough into 8mm slices. Place on baking trays and bake for 12 minutes.
