Beetroot cup cakes

I am the first to put my hand up that I am no cook.   Too much effort as far as I am concerned and I do very little baking.

However, I had a rush of blood and had some beetroot fresh from the garden so I went online and found this recipe.

Made 36 small cupcakes and they turned out really nice (even though I say so myself :))  Lovely and light.  Have frozen most of them and kept about 8 out to eat.  Hubby has already demolished three of them.

Took about 13-14 minutes for each batch in my little mini oven.  Made three lots of twelve.

If anyone else makes these here is a hint re melting the chocolate.  The secret is to do it on a defrost setting and to make sure all the chocolate is the same size.  Either in squares or what I did was break up the chocolate bar (cadburys cooking chocolate ..dark) and then put the lot in the blender and blitz until it was ground up very finely.

It took about 1minute 25 seconds in my 700 watt microwave on the defrost setting.  May be shorter if in a larger wattage oven.  Just do about 45 seconds and then short bursts until you get it melted.
